
Annual Caleb’s Birthday Cake
(coconut, lemon curd layer cake)
Somewhat artistically presented, before we dug in. :)
Recipe:
For fluffy white-chocolate whipped cream frosting:
3 cups heavy cream, chilled
9 ounces white chocolate, coarsely chopped
2 teaspoons coconut or golden rum1 jar of lemon curd
White cake (cheat and use boxed/store bought)
Coconut for decoration
Heat 1 cup of cream, pour over the chocolate, mix until smooth.
Whip the rest of the cream. Fold into the chocolate, along with the rum.Divide in half. Reserve half for frosting over the cake. Mix the other half with the lemon curd.
Bake cake. Cool. Slice in 3 layers. Spread with the lemon curd cream.
Frost the rest of the cake with the white chocolate cream. Sprinkle (liberally) with coconut.Raise a toast to Caleb’s birthday, and then eat up. :)
